And of course you need to serve with some fries – some lovely root veg ones here; potatoes, sweet potato and parsnip for extra taste.
This is the perfect meal to make for Father’s Day or eating alfresco this summer.

Ingredients
For the root veg fries
- 3 small potatoes peeled and cut into fries
- 2 small carrots peeled and cut into fries
- 1 parsnips peeled and cut into fried
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 garlic powder
- Big pinch sea salt
For the caramelised onions
- 2 red onions sliced into circles
- 2 tbsp olive oil
- Sea salt
For the burgers
- 1 tbsp olive oil
- 1 red onion finely chopped
- 3 garlic cloves sliced
- 1 tsp ground cumin
- 1 tbsp smoked paprika
- 200 g mushrooms finely chopped
- 3 tbsp soy sauce
- 3 tbsp bbq sauce/ tomato ketchup
- 2 tbsp balsamic vinegar
- Big pinch sea salt and ground black pepper
- 1 tsp baking powder
- 200 g firm/smoked tofu chopped up finely
- 100 g plain flour
To serve
- 8 buns of choice
- Gherkins
- Hummus of choice
- Tomato chutney
- Vegan mayo
- Little Gem lettuce leaves
Instructions
To make the fries
Pre - heat your oven to 180c.
Add the veg to a large roasting pan with the olive oil, salt, smoked paprika and garlic powder.
Roast for 20 minutes, then turn. Continue to roast for a further 20 minutes or until the veg is cooked and golden brown.
To make the caramelised onions
First, cook the onions by adding the oil and sliced onion to a medium pan.
Fry on a low heat until soft and caramelised - approx 12-15 minutes.
Season with salt and pepper.
Turn off the heat.
To make the burgers
Add the oil and onion to a frying pan and cook for 6-8 minutes to soft. Now add the garlic and spices and cook for a further minute.
Add the onion mix along with all the ingredients apart from the flour to a food processor.
Blitz until you get a chunky paste.
Now transfer to a large bowl along with the flour. Stir to combine.

Repeat - remember to leave enough room to flip the burgers.
Fry for 2-3 minutes on each side until lightly brown.
Set aside on a plate and repeat with the remaining mixture.
To serve
Top the buns with hummus, little gem, burgers, caramelised onions, and toppings of choice.

Hi there, I can’t have soy so what would you suggest as an alternative for the tofu (? beans or lentils/rice?), or would the texture be too negatively impacted. Thanks so much for any suggestions.

Its the tofu which gives them the squidgy texture. You could try lentils though!xxx
