Recently my daughter and I have become smitten with cornbread. I never had it growing up and really only began eating it a couple years ago. A friend of mine (looking at you Maria) is known for her cornbread and corn bread pudding. When I came across Oprah Winfrey's Skinny Cornbread recipe, you know we had to give it a whirl!

What's not to love about Oprah?? She's funny, relatable, driven, giving and so much more. I admire her. Her latest cookbook, which I was sent a copy to review, Food Health and Happiness -115 on-point recipes for great meals and a better life,is gorgeous! It's a work of art really.

In the cookbook, Oprah weaves in intimate photos, stories and in my opinion some fantastic recipes. The soup section of the book is impressive. Oprah offers fresh, vibrant salad recipes as well as entrée options. Most recipes are simple, yet elegant and well thought out in terms of balance.

This is a really nice cookbook and a great read as well. I see quite a number of recipes with bright flavors I want to make, which I have to say hasn't happened in a while for me when flipping through a cookbook. Check it out, you can see a preview of the book as well.

FAQs

What is the difference between New York cornbread and southern cornbread? ›

While both styles generally use the same ingredients -- cornmeal, flour, eggs, and baking powder -- the variance lies in the flavor and texture. Northern-style cornbread tends to be sweeter, moister, and cake-like compared to its Southern counterpart.

How do you keep cornbread from being dense? ›

Add in some Flour

If you use straight cornmeal, it will tend to be dryer. Adding in flour will help to keep the cornbread moist. I like to use a 50/50 ratio of cornmeal to flour in my recipe. I feel this gives a moist and fluffier texture.

How do you make cornbread that does not fall apart? ›

If you've been baking with the same old flour and your cornbread is still crumbly, try switching to another brand. If you aren't using all-purpose white wheat flour, switch to that type. Add a handful of frozen corn. Frozen corn will add moisture to your batter during the baking process.

What is the difference between honey cornbread and southern cornbread? ›

In case you were wondering, Sally is, of course, from a Northern state— Maryland, specifically. This recipe includes large amounts of sugar, honey, and melted butter, which distinguishes it from the Southern cornbread recipe.

Why do Southerners not put sugar in cornbread? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

Which makes better cornbread white or yellow cornmeal? ›

Southerners, on the other hand, tend to prefer white cornmeal. Many people believe that it is because, in the old South, families used white cornmeal as it more closely resembled “fancy” European wheat flour. In any case, today it remains a main component in traditional Southern buttermilk cornbread.

Should I add an extra egg to my cornbread? ›

The extra egg which is increased protein and binder makes the cornbread denser and heavier in texture.

Should cornbread batter rest before baking? ›

Note: We recommend allowing cornbread batter to sit for 10 to 15 minutes before baking, so if you prefer, you can delay heating the oven until you make the batter.

Is it better to use butter or oil in cornbread? ›

While oil can make cakes and quick breads luxuriously tender, I find the cornbread lacks flavor if butter isn't present. Because butter doesn't make the bread as moist as oil does, I pair it with buttermilk. Buttermilk: Buttermilk makes cakes, muffins, and breads extra moist.

Will an extra egg make cornbread less crumbly? ›

Eggs, or egg substitutes help add structure to the cornbread. Without an egg or substitute, the cornbread may crumble and fall apart easily.

Why does my cornbread always sink in the middle? ›

While not a professional chef, my experience with corn bread, be it packaged or made from scratch is if you over mix it, it's gonna fall! Also, let it sit for 4-5 minutes after gently scraping it into the pan and let the ingredients start their magic reactions. No peeking while baking!! That can make it fall too.

What is the best cornmeal for cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

What happened to Ballard cornbread mix? ›

Martha White purchased The Ballard brand many years ago and pulled the Ballard Mix. While the regular Martha White is a fine cornbread mix it is defiantly different than Ballard was. By popular demand Martha White brought it back!

What did Native Americans call cornbread? ›

Among them was a version of Indian bread made of cornmeal, salt and water called pone or corn pone. The name came from the Algonquin word apan, meaning "baked." The Narragansett word for cornbread, nokechick, became no-cake and then hoe-cake.

What is the difference between Yankee cornbread and Southern cornbread? ›

The thing that distinguishes Southern cornbread from, say Yankee cornbread, or any other cornbread one is likely to eat outside of the southern states, is that it is savory, not sweet, and it is made mostly with cornmeal.

What does Southern cornbread taste like? ›

The texture was coarse and crumbly, while the taste was plain and bland. Up until that point in my life, I had only consumed sweetened Yankee cornbread and was completely unaware of the savory Southern variety.
